Welcome to the Nebraska Department of Education’s School Nutrition Program Introduction Guide—a starting point designed to help YOU, new Food Service or Bookkeeping staff, confidently step into your new role. This self-paced course provides an overview of Nebraska’s School Nutrition Programs, key terms, trainings, and requirements. Some of the content may not apply to your specific role, but engaging with all of the content will help you have a comprehensive understanding of how to operate the School Nutrition Programs at your school or institution.
This guide does NOT contain all requirements and procedures; it is intended as an introduction to key School Nutrition Program concepts and regulations. This guide is not a substitute for other training.
Course Structure: What to Expect
There are 3 modules, or "chapters". Each module contains a few pages that focus on one key concept. Each page will list whether Food Service Directors or Bookkeepers typically have responsibilities related to that topic. Unless a page states, "For Food Service Directors Only" or "For Bookkeepers Only", it is important to read through each section. Each school or institution may categorize Food Service Director and Bookkeeper roles and responsibilities differently. The Intro Guide associates these roles with certain topics as a general guideline.
There are knowledge checks at the end of each module that you will need to score 100% on to advance to the next module. The knowledge checks will include questions about the most essential information in each module. There is no time limit, and you have unlimited attempts to score 100%. If you have prior experience as a Nebraska School Nutrition Program Food Service Director or Bookkeeper, you may choose to skip the educational pages and complete the required knowledge checks to advance through the Intro Guide.
To complete the Intro Guide, you must complete the Contact Information form. After doing so, you will be able to download a 1-hour Continuing Education Certificate, and a Program Specialist will contact you to schedule a time to complete one-on-one training.
